GREEK RECIPES: B R I A M: VEGAN TASTY FOODS




The story behind the recipe:
The Cretan diet is basically the nutrition of the poor farmers of Crete.
Briam is a sample of this healthy diet!
While in the past times the Cretan women used to work in the fields all day with the rest of the family, they didn't have time for cooking.
In the available time food had to be simple, easy and simultaneously strengthening and tasty.
What easiest than collecting few veggies from the garden (potatoes, zucchinis, eggplants, tomatoes, carrots - whatever available - cut them in pieces and cook then in a casserole or roast them in a pan adding what else… pure olive oil and herbs from the garden.

Takes only 10 minutes and then having time to take care of the house!


Briam is the sample of how Greek cuisine takes a few of the simplest of ingredients and turns them into something delicious with little effort.


A traditional dish served as a main course, and with olive oil as the only source of fat, a sample of the Mediterranean diet.
summer favourite classic, Greek mixed roast vegetable dish full of the aromas of fresh vegetables and herbs. Similar to ratatouille.


Easy to make and can replace or add any vegetables you have available and still get a great dish.
Only 10 - 15 minutes prep time, the briam dish is definitely the perfect quick and easy vegetarian / vegan meal!
Potatoes, sweet, flavourful aubergines and juicy zucchinis, green and red peppers, sweet onions and garlic coated with olive oil  garnished with fresh herbs  and then baked to perfection to form an amazing full of Mediterranean flavours hearty vegetarian dish.

Simply delicious!
Can serve it hot or cold.

Ingredients
3 medium onions, peeled and quartered

4 cloves of garlic, peeled & sliced

4 medium potatoes, peeled & cut into chunks
2-3 medium tomatoes cut into chunks

2 courgettes, thickly sliced
2 green or red bell peppers, trimmed deseeded and cut into chunks

1 big or 2 medium aubergines cut into chunks



1/4 litre of olive oil ( 1 glass)

Salt, freshly ground pepper, to taste
Oregano
2 tbsp of freshly chopped parsley or dill.
Water
How to Make
In a large shallow baking pan, place all the chopped vegetables together.

Season with salt and pepper, oregano, 


Pour over the oil and make sure all the vegetables are coated with the seasoning and oil.

Next add enough water to come half way up the vegetables.

Bake in the middle of the oven for 1 hour at 180 degrees, or until all the vegetables are tender.
